Our Coravin selection is a chance for our wine team to share some really special wines with you – a way to enjoy rare options that would not normally be available by the glass, and without investing in the bottle.  

For the colder months, we have chosen to show the terroir of the Italian Dolomites. Featuring indigenous grapes such as Nosiola, Teroldego and Lagrein from some of the region’s most noteworthy producers, including Elisabetta Foradori, Pojer e Sandri, Franz Haas and Tenuta San Leonardo.  

This selection shows that minerality, precision, purity and finesse are hallmarks of the best example from this, often overlooked, Alpine region.

Foradori – Fontanasanta Nosiola 2020 [from magnum] 


Agricola Foradori is one of the pioneers of biodynamic farming in the Trentino area, focusing on indigenous grape varieties, farming and making wine with a low intervention methodology. It was established in 1939 when a turn-of-the-century vineyard was purchased by Vittorio Foradori. Today, it is still family-owned and run in harmony with nature. Alongside wine, the family also cultivates a small holding and produces cheese, organically and with local ingredients. Nosiola is an ancient Trentino variety, once widely planted across the region. Emilio, Theo and Myrtha, the current custodians and fourth generation of Foradori, are careful to vinify this grape with a long gentle skin maceration in clay amphorae, the way it used to be, which brings out the best and truest characters in the grape. A wine of complexity and depth - the Fontanasanta Nosiola is exceptionally gastronomic, orchard fruit meets a gentle tannic texture and bright acidity, which benefits from having a touch of extra age in magnum bottle. A wine to enjoy with many of manteca’s dishes, though a particular hit with the lumache and phesant ragu. 



Pojer e Sandri – Faye Bianco 2011 [from magnum] 

 

Pojer e Sandri have spent the last 49 years making ‘heroic wines’ on the hill of Faedo in Trentino, 300m – 700m above sea level; “two hectares, few resources, a few ideas, a lot of courage, a dream.” The Faye Blanco is one of their reserve collection, started in the 1980s and an ode to Burgundy; Pinot Bianco, with Chardonnay, fermented in oak barrels, then aged before bottling. This particular wine has been sourced in magnum from the 2011 vintage, giving it a lovely complex and developed toasty character - a gentle but serious wine that would work with our calamarata with blue fin tuna bolognese. 

 

Franz Haas – Pònkler pinot nero 2013  

 

Grown 750 meters above sea level in a single vineyard from volcanic soil, this pinot nero is a true reflection of its terroir, altitude and time in bottle. Concentrated and intense aromas jump from the glass; it shows great depth of flavour with wild red and black autumnal fruits integrating with spice and a hint of soft leather. Made for game, this Pinot Nero has more body and minerality than many, though wine is still silky and fresh. It would pair wonderfully with our fallow deer rump, sausage and pickled red currants. 

 

Franz Haas was established in 1880 by its eponymous founder and has been passed down through eight generations to the first-born child within the family. Today, his descendants continue to make wine under Franz’s name, working to his beliefs that, “science and calculations are indeed necessary to obtain superb wines, but it is love, passion, and determination that are essential to give them character and complexity.”
